Our Favorite Thanksgiving Recipe - Buttermilk Bacon Blue Smashed Potatoes
Kaitlyn Leach

There are mashed potatoes… and then there are Buttermilk Bacon Blue Smashed Potatoes.

Creamy Yukon gold potatoes, tangy buttermilk, blue cheese and crispy bacon make this one of those sides that might just steal a little attention from the turkey. If you're looking for something different to add to your Thanksgiving table this year, this is one of our favorites.

Ingredients

Instructions

Wash the potatoes and remove any dark spots or imperfections, leaving as much of the skin on as possible. Cut the potatoes into cubes and place them in a large stockpot. Cover with cold water.

Bring to a boil and cook until the potatoes are tender, about 15–20 minutes.

Drain the potatoes and return them to the pot over low heat. Add the butter and buttermilk, then mash until they reach your preferred consistency.

Add the salt and pepper, followed by the blue cheese and crumbled bacon. Reserve a little bacon and blue cheese for the top if you'd like.

Taste and adjust the seasoning as needed, then finish with sliced green onions.

Serve & enjoy!

Creamy, savory, a little tangy and loaded with bacon—what's not to love?
